The Chenin Blanc for our Sole was carefully hand-picked at maximum ripeness from the outer part of the canopy where the bunches were let to ripen under the long cold winter sun, hence the name ‘Sole’. The Viognier for this blend was hand harvested with its most ripe intense flavors. Harvested in the mornings of February at 23°Brix, the grapes were hand sorted before destemming and crushing. Seventy percent vinified in stainless steel and thirty in second year French oak barrels together with seven percent Vioginer. Four months of extended battonage adds to the complexity and the creaminess of the palate.
This blend between Chenin Blanc and Viognier is complex yet lively. The wine shows arrays of tropical fruits, pineapple, ripe peach and flowers with hints of vanilla. Great minerality with flavors of yellow pears and garden plums, mingled with Viognier’s distinctively floral nose of honeysuckle and white pepper. It is well-balanced with creamy oak, dry and crisp with a soft and lingering finish. Round and elegant palate with great acid backbone of passion fruit balances with a vanilla oak finish. This wine is pleasurable drinking on its own or with food.
This blend of Chenin Blanc and Viognier is crafted to be enjoyed young and a few years of cellaring will reveal greater complexity. Drink now- 2018.
